Rosemary Salmon, Cabbage Slaw & Paleo Lemongrass Dressing-
If you are looking for a fast version of this salmon:
Coat basket of air fryer with olive oil.
Brush salmon with olive oil and drizzle lemon juice a little honey on top.
Sprinkle with Sea Salt and Fresh Rosemary
Set Air Fryer to Fish setting or for 10-14 minutes.
3 Wild Caught Sockeye Salmon Fillets (Thawed in cool water day of)
2 Tablespoons of Raw Organic Honey *If honey is thick you can thin out with a little Lemon or Orange Juice)
3 Tablespoons of Oil (Olive or Avacado) *Coconut is another choice but this will change the flavor.
1 Teaspoon of Organic Fresh Dried Rosemary (Anti-Inflammatory)
1/4 Teaspoon of Sea Salt (Essential Natural Elements)
1/4 Teaspoon of White or Black Pepper (I use White since it is a good low Oxolate Choice)
1/4 Teaspoon of Dried Dill (Vitamins A & C)
span style=”font-size: 14pt;”>
Sometimes you can find pre-shredded organic cabbage at the store. If not, look for an organic leafy head of cabbage and slice thin into strips, or use a food processor.
1 teaspoon coconut oil
4 green onions (white parts of onion only) chopped
2-3 drops of lemongrass essential oil (use very sparingly)
1 tablespoon diced garlic
5 tablespoons coconut milk
1/4 teaspoon apple cider vinegar
Sea salt & black pepper, to taste
Melt coconut oil and add with all other dressing ingredients in a high powered blender. Blend for 30 seconds or until smooth.
Toss into slaw.
*Consider adjusting the recipe to make a larger amount for use during the week. The dressing is amazing!
