Beet Leaf & Basil Pesto!
What to do with Beets? Roast them in the oven with Olive Oil, Salt & Pepper (that’s really all you need) and use the leaves for Beet Leaf & Basil Pesto. Now… that is using the whole plant! Why leave anything to waste when there are nutrients in there?
Ingredients & Directions:
Blanch in Boiling Water (2 Minutes)
Greens from 2 Beets
1 Garlic Clove
Sprinkle of Celtic Salt
Strain and let cool and place in a Vitamix with
1 Handful of Fresh Cut Basil
1/4 Cup Pine Nuts
2 Tablespoons of Olive Oil
Salt & Pepper to Taste
