This basic recipe can be used over and over again. I would classify it a “Kitchen Staple” but it will be in “Breakfast” for now. I have used it as “granola” in parfaits, wafers, crust for tartes and in balls for quick grabbing energy bites.
Ingredients:
1 Cup Brazil Nuts (Selenium)
1 Cup Cashews (Manganese)
1 Cup Sunflower Seeds (E, B1) or Pumpkins Seeds (Zinc)
1/2 Cup Pecans (A)
6 Pitted Organic Mejdool Dates
Celtic Salt to taste
1 Cup Enjoy Life Chocolate Chips (incorporate after pulsing)
1/4 Cup Organic Raw Honey (incorporate after pulsing)
Instructions:
*Preheat oven to 350 degrees
1. Put in high powered blender or food processor on PULSE to Chop Roughly. Add honey and chocolate chips and stir to incorporate.
2. Use parchment and press mixture firmly into a baking dish. If making bars you would want to add shredded coconut for a binder.
3. Bake for 15 minutes and check. When done you can roll into balls, push into cupcake liners (for wafers) or tarte pans for larger dessert bases.
*You can usually find Enjoy Life Chocolate Products at Whole Foods or on Amazon.
*The Nutrients in foods that are specific for your needs can be identified by a dietician. Nutrients from foods are my first choice. I rely on my practitioners to identify needs for specific supplements.
Enjoy!
