Healthy Meatball Recipe with a new twist!
Balsamic is the key ingredient that gives these everyday meatballs a nice kick. Who knew that these could be kid-friendly, tested, and approved too?
These meatballs are super quick and easy and have none of those inflammatory binders.
*Preheat oven to 400 degrees- or get a large skillet
Ingredients:
1 1/2 pounds of grass-fed ground beef
1 egg beaten
2 small or 1 large garlic clove minced
1/4 cup fresh parsley
1 teaspoon dried oregano
sea salt and ground pepper
1 Garlic Clove, Minced
1/4 Cup Arrowroot Flour
1/2 cup Balsamic Vinegar
Note: 2 TBSP Olive Oil for skillet prep or preheat oven to 400 degrees for oven prep
Instructions:
Oven Prep
1. Mix all of the ingredients together in a bowl
2. Use your hands or ice cream scoop to make each meatball (mine makes 20)
3. Use clean oil to lightly grease glass baking dish
4. Bake for 20 – 25 minutes at 400 degrees *I turnover with tongs so that all sides look the same
5. Serve in lettuce cups, with marina or over your favorite paleo noodle
Skillet Prep
1. Mix all of the ingredients together in a bowl
2. Use your hands or ice cream scoop to make each meatball (mine makes 20)
3. Add to skillet prepared warmed skillet coated with olive oil
4. Brown on all sides
5. Add Balsamic and turn down the heat and reduce. (Approx 6-8 min.)
