Paleo Banana Bread- can you hear the choir singing!
Do you ever get stuck on how to make a healthy breakfast? I was so excited to play around and make this old fav cleaner with these ingredients and find just the right combination of coconut flour and arrowroot starch to make a healthier version of my childhood favorite banana bread. In our home we buy lots of bananas- for ice cream, smoothies, grab and go- sometimes it’s hard to get my hands on very ripe bananas. But you only need 3 so I hide what I need from my 4 little monkeys.
Ingredients:
3 Ripe Bananas
4 Organic Eggs
1/4 Cup Organic Raw Honey
1/3 Cup Coconut Oil, Melted** (I use Dr. Bronner’s Organic Coconut Oil)
1/3 Cup Coconut Flour
3 Tablespoons Arrowroot Flour (Gluten Free and Easily Digestible)
1/2 Teaspoon Baking Soda
1/4 Teaspoon Salt
1 Teaspoon Cinnamon or 1/4 Teaspoon Vanilla (if avoiding high oxalate foods- use Vanilla)
*I have forgotten the coconut oil (got distracted) and it was still amazing!
Instructions:
- Preheat oven to 350 degrees
- Grease 7.5″ x 3.5″loaf pan with coconut oil or use parchment paper
- In a large mixing bowl, mash the ripe bananas and mix in the eggs, honey, and melted coconut oil
- Add the coconut flour, arrowroot flour, *cinnamon or vanilla, and salt
- Mix well
- Transfer to greased/lined pan and bake for 30-45 minutes until toothpick is clean
- Allow to cool in pan and Enjoy!
