Paleo Blueberry Rosemary Ice-Cream

Paleo Blueberry Rosemary Ice-Cream!!….

Who doesn’t love ice-cream?  For those that are dairy free this is a great homemade option that is sugar free too!  I do LOVE NadaMoo Brand that is made in Austin, TX.  This recipe has a Coconut Base just gets richer and thicker with farm fresh eggs.  Supportive ingredients are added with antioxidant Blueberries and anti-inflammatory Rosemary.  My kids did like it and the adults loved it.  A great blending of flavors that was unique, a little rich and not too sweet.

Ingredients:
1 Can Full Fat Organic Coconut Milk Refrigerated

1 Cup Organic Blueberries
1 Teaspoon Lemon Extract or 3 drops lemon essential oil
2 Tablespoons Organic Honey
1 Teaspoon Fresh Minced Rosemary
2 Farm Fresh Egg Yolks (whisked)

Instructions:
1.  In a food processor combine Coconut Milk, Blueberries, Honey, Rosemary and Lemon Extract and run until smoothly incorporated.

2.  Pour mixture from food processor into a medium saucepan.  Slowly incorporate whisked egg yolks into the mixture while stirring.  Remove from heat when mixture comes to a slow boil.

3.  Remove from heat to cool completely.

4.  Pour in a glass container, cover and refrigerate overnight or for at least 2 hours.

5.  Place mixture in ice cream maker– they are easy to use, clean & store (no need for salt…churn while eating dinner and then it is ready!)
