A Clean, Comforting & Easy Dish!
Chicken & Artichokes- YUM! This Paleo Comfort Dish really hits the spot on a rainy day! Part of building a “clean-eating kitchen” is having clean ingredients readily available. Amazon Prime makes it easy for doorstep deliveries of pantry staples- and sometimes you can get a discount on subscription items! Who doesn’t love that? Planning out meals on a rotating schedule makes it all possible. My hope is that you can use the recipes on this blog site to get inspired to feel amazing.
Ingredients:
1 Pint Size Jar of Marinated Artichoke Hearts
2 Tablespoons of Ghee, Grass-Fed Butter or Coconut Oil
Sprinkling of Celtic Salt
1 Teaspoon of Organic Raw Honey
1/2 Cup Chicken Broth
1 Minced Garlic Clove
1/2 Quartered Yellow Onion
1 Tablespoon Coconut Flour or Cassava Flour (if there is a coconut allergy Cassava is a nice alternative)
8 Organic Chicken Thighs (skin on provides more flavor)
Instructions:
Preheat oven to 375 degrees
1. Place 2 teaspoons of healthy fat or oil in a Dutch Oven or Large Oven Safe Skillet and melt over medium-high heat.
2. Rinse and pat dry chicken, then sprinkle with salt and pepper.
3. Add the chicken to the pot and cook for 8 minutes, turning every few minutes to ensure even browning.
4. Remove chicken and set aside.
5. Add the remaining 2 teaspoons of healthy fat/oil to the used pan and add minced garlic and onions and sauté until tender.
6. Stir in broth, apple cider vinegar, honey and coconut or cassava flour and simmer for 10 minutes. Stir while simmering so it does not stick to pan. It will thicken during cooking.
7. Pour sauce into glass bowl or mug.
8. Add chicken back into used pan and then immediately pour sauce over the top evenly.
9. Scatter 1 pint-size jar of marinated artichoke hearts over top.
10. Place in oven and roast for approximately 40 minutes.
