Bruschetta Topped Chicken
This is hands down one of the easiest IMPRESSIVE dishes to make!
Two key eye-grabbing words … Easiest and Impressive!!! Your guest will forget that they are eating clean!
It is perfect for any special occasion or a holiday dish! The combination of the tomatoes and basil just scream Christmas!
Baked chicken breasts
1 jar of stuffed pimento olives
1 bunch of fresh basil, cut into thin strips
1 carton of rainbow cherry tomatoes, quartered
1 small red onion, diced
1 garlic clove, minced
1/4 teaspoon Celtic salt
Black Pepper, to taste
1 teaspoon balsamic vinegar or 1/4 teaspoon apple cider vinegar (if avoiding sulfites)
- In a medium bowl, add all the bruschetta topping ingredients, mix well and chill.
- This topping stays fresh for two days in refrigerator.
- Bruschetta topping pairs well with chicken, seafood, paleo toast, cloud bread or incorporated into a frittata.
