Chocolate!
This is another yummy ingredient you don’t need to give up! Yeah!!!
These chocolate squares are quick, easy and good. Thank you ENJOY LIFE CHOCOLATE COMPANY!!! They make baking dairy, soy & and gluten-free possible! Chocolates, cookies, blondies, cake pops and more. I can usually find these at Whole Foods, or I can use Amazon Prime if I am stocking up.
After melting the chocolate- the fun begins. Little ones can help too! There are list of add ins I like: Coconut, Dried Fruit (Sulfite Free), Pecans, Almonds, Pistachios, Sunflower Seeds and Paleo Caramel. These chocolates really get better with the more add-ins so don’t be shy.

- 1 Cup Enjoy Life Chocolate Chips (this is for 1/2 batch- making 9 pieces- it's an easy recipe to double)
- 1 Tablespoon Grass-Fed Butter (I use Kerrigold)
- Add ins: Coconut, Dried Fruit, Pecans, Pistachios, Sunflower Seeds and Caramel- time to get creative!
- Place water in a medium-sized saucepan to cover 1/4 of a Pyrex measuring cup and bring to a low boil and turn down heat to low
- Place chocolate chips and butter in the Pyrex Measuring Cup (the handle helps when removing) and set inside the hot water bath and stir to melt.
- Now the fun begins... you can put some add-ins on the bottoms of each square mold or you can incorporate into the mixture all together.
- Once melted pour into silicone mold squares and top with more add-ins.
- Refrigerate for 1-2 hours to harden and store in a sealed glass container. I use Glasslock Brand because we avoid plastic as much as possible.
- *You can also do this in a microwave or double boiler
