Healthier Chocolate Chip Cookies!

These easy to make HEALTHIER chocolate chip cookies are AMAZINGLY Yummy! 

Seriously- they are adult and kid approved!  They are gluten free, dairy free and soy free!  Don’t be fooled- these are a treat!  BUT… if you find yourself on a any restrictions for healing, allergies or on a I AM GOING TO EAT HEALTHIER KICK- then this recipe is here for YOU!

Healthier Chocolate Chip Cookies

Ingredients:

1 1/2 Cups Oat Flour (purchased or grind whole gluten free oats in blender)

2 Teaspoons Organic Vanilla

1 Large Egg

4 Tablespoons of Sweetener (Organic Brown Sugar, Coconut or Date Sugar)

1/2 Cup Coconut Oil (melted)

1/2 Teaspoon Baking Soda

Sprinkle of Ground Sea Salt

1/2 Cup Enjoy Life Brand Chocolate Chips

Paleo Cookies

Instructions:

  1. In your high speed blender- pour oats into the dry container and blend until it becomes a flour.  (You can also use a food processor)
  2. In a separate bowl- combine the vanilla extract, large egg and sugar in a bowl.  Slowly add in the melted coconut oil and beat everything until combined.
  3. Stir in the oat flour (measure 1 1/2 Cups of Flour after blending), baking soda and salt.
  4. Once mixed, fold in chocolate chips.
  5. Cover and place in refrigerator for at least 1 hour.
  6. Preheat the oven to 350 degrees.
  7. Line a baking sheet with parchment paper or use a baking mat.
  8. Using a cookie scoop- add to baking sheet and form as desired.  Press gently and shape- gently so they do not become too flat.
  9. Bake for 8-10 minutes until the edges become golden brown.
  10. Let cool and ENJOY!
