Paleo Southern Chicken Salad!
I don’t always put mayonnaise in my chicken salad but in the South that’s what they do! I use Olive Oil usually but sometimes I hear my childhood calling for Mayo (Homemade Mayonnaise) or I use Primal Brand. A lot of what you find in the South has mayonnaise in it or on it! It is good stuff.
Ingredients:
2 Grilled or Rotisserie Chicken Breast (I buy the Organic Naked Rotisserie Chickens from Whole Foods) *I save the legs & thighs for lunch boxes and the bones for homemade bone broth.
1 Large Organic Green Apple
2-3 Green Onions (Bulbs & Stems)
1/4 Cup of Clean Mayonnaise
1/2 Teaspoon of Organic Dried Dill
1/4 Teaspoon of Sea Salt
Instructions:
1. Separate the Rotisserie Chicken, slice and cube the two breasts.
2. Add in Green Apple, Green Onions, Dill & Sea Salt.
3. Add in 1/4 Cup of Mayonnaise a little at a time- you can always add more.
That’s it- it is that easy. The green onions and dill really work nicely together. It is a perfect lunch to pack in a Glass-Lock and take for an on-the-go lunch.
